Tomatoes Taste Like Summer!
I love summer and the bounty of tomato goodness it brings. This morning I collected a pretty bowlful and can’t wait to use them in a lovely summertime lunch.
Lettuce of your choice
Red onion, diced
Italian or French bread, torn or cubed
Salt n Pepper to taste
Chop up your fresh fruits, veggies and mozzarella. Toss them in a big bowl. Toast the bread cubes in your oven until golden brown and crispy on the outside and cool. Add to the big bowl. Combine the vinegar, oil, garlic and seasoning and whisk together until emulsified. Toss the veggies, fruits, mozzarella and bread in the dressing and chill.
