Today is National Strawberry Sundae Day! While that sounds delicious, this summer weather has me in the mood for another strawberry treat. Strawberry Thyme Lemonade! My cocktail garden is busting with thyme, so I snipped a couple sprigs and tried making thyme simple syrup and adding it to my strawberry lemonade. The result: a yummy, fruity and herbaceous summer cooler. I love this combo with thyme, or basil is also lovely.
Strawberry Thyme Lemonade
- Handful of Thyme (8-10 sprigs)
- 1 cup sugar
- 2.5 cups strawberries (hulled and sliced)
- 1.5 cups lemon juice (10-12 lemons)
Combine sugar, thyme and 1 cup of water to a boil, stirring occasionally until sugar is dissolved. Cool and toss that thyme out.
Now mix up those strawberries, lemon juice and thyme simple syrup with 5 cups of water in a big pitcher. Chill and serve iced.
Add a splash of vodka if you’re feelin’ it! Garnish with thyme sprigs and strawberries if you’re feelin’ fancy!
