Hugh’s Healthy, Easy Coleslaw Recipe

Cabbages on our raised garden beds are doing great this year.  This healthy, easy coleslaw recipe is delicious and takes only a few minutes to toss together. Keep it simple or spice it up, depending on your taste preferences.


1 small head of green cabbage
1 carrot
1/3 cup mayonnaise
Juice from ½ lemon
3 tsp. sugar
Salt and pepper to taste

Optional – to spice it up

Add any or all of the following:
2  radishes, thinly sliced
1/2 white onion, thinly sliced
1 tsp horseradish


Grate the cabbage and carrot on a box grater. Whisk together the mayonnaise, sugar, lemon, salt and pepper. Mix everything together and enjoy! Seasoning can be adjusted to taste, of course. The cabbage should be wet, but not swimming, in dressing.  Enjoy!
